SUPER
SWISS STEAK
DUB EGBERT
1/2 cup flour
1 teaspoon salt
1/4 teaspoon pepper
3 1/2 pounds round steak
1 white onion, chopped
2 teaspoon salt
3 tablespoon brown sugar
1 1/2 cups pineapple juice
3 potatoes, peeled, quartered
1/2 tablespoon Worcestershire sauce
Combine flour, salt and pepper and pound into meat. Save leftover flour mixture.
Cut meat into 1 inch chunks. Brown
meat in oil or butter.
Brown chopped onions in butter. Make
a paste out of remaining flour, brown sugar and some juice.
Stir into onions. Gradually stir in rest of juice.
Put onion mixture and meat into large pot, cover
and simmer over low heat for 1 1/2 hours.
At 45 minutes to go, add quartered potatoes.
