BEANS WITH SMOKED SAUSAGE

1 lb
navy beans
1 cup onions, chopped
1 tablespoon garlic, chopped
1 teaspoon Louisiana hot sauce
2 cups dry white wine
Water to cover about 2 inches
Olive oil to brown meat
1/4 lb salt meat
2 lbs smoked sausage
Salt to taste
Soak beans overnight in wine, water, and seasonings. Brown meat. Add meat to bean mixture, cover and simmer until
beans are tender - 2 to 2 1/2 hours. Salt
to taste.
