DAMN GOOD BEEF STEW

DUB EGBERT



2 lbs. stew beef cut in 1/2 inch cubes
Olive oil
Flour
1 medium onion chopped
3/4 medium Bell pepper chopped
3 cloves garlic chopped
1 28 oz. can tomatoes chopped
1 10 1/2 oz. double strength Campbell's Beef Broth
1 1/2 cup red dry wine
1 1/2 cup water
2 carrots sliced
3/4 lb fresh mushrooms sliced
1 teaspoon oregano
1/2 teaspoon thyme
1 1/2 teaspoons basil
1 bay leaf
1 1/2 teaspoon salt
1/2 teaspoon pepper
2 turnips diced
1 16 oz. can whole corn drained


Dredge beef in flour.  Brown in oil.  Remove beef to stew pot. Slow cook onion, Bell Pepper and garlic in oil until tender.  Add onion mixture to beef.  Add remaining ingredients except for the turnips and corn.  Simmer for 1 hour.  Add diced turnips.  Simmer for 3/4 hour.  Add corn.  Simmer for 15 minutes.
