BBQ BEEF RIBS

3 teaspoons salt
1 1/2 cups sugar
3/4 cup brown sugar
9 cups beef stock
1 1/2 cups prepared mustard
3/4 cup white vinegar
3/8 cup Liquid Smoke
1 1/2 cups Worcestershire Sauce
3 cups tomato paste
3 tablespoons chili powder
3 teaspoons hot sauce
12 large, meaty beef ribs (prime rib bones)


Mix all ingredients except for ribs and bring to a simmer.  Cover the ribs with water and boil for 10 minutes.  Thoroughly drain the ribs and cover with approximately 2/3 of the sauce.  Continue to slow-simmer the sauce, uncovered, for 1 1/2 hours.  Stir often.  Slow-simmer the ribs, uncovered, for 1 hour and then cover for an additional hour or until ribs are done (meat should be very tender and nearly falling off the bone).  Stir often. Serve the BBQ sauce over the ribs. Serves 4.
