APPLE CRUMBLE

1 cup brown sugar
5 oz. all-purpose flour
4-6 cups cooking apples (1 1/2 to 2 lbs)
3 tablespoons lemon juice
1/2 cup butter
1/2 teaspoon ground cinnamon
1 teaspoon lemon rind, grated

Combine 1/2 cup of sugar and 1 oz. of flour in mixing bowl.  Squeeze lemon juice over apple slices.  Toss apples with sugar mixture.  Put in oven proof baking dish.

Thoroughly mix butter, remaining flour and cinnamon.  Add lemon rind and remaining 1/2 cup of sugar.  Sprinkle mixture over apples and bake in oven at 350o F for 30 minutes or until top is golden.  Serve warm or with ice cream.
